Paul Meesawat - Chef and Owner

Chef Paul, born and raised in Thailand, moved to Las Vegas in 2000 after earning a degree in architecture. He studied at Le Cordon Bleu, graduating in 2005 while working at the French restaurant Fleur de Lys, where he became Executive Chef in just five years. He later joined Caesars Palace, managing dining for 4,000+ rooms and 5,000 staff daily. After years in fine dining, he followed his roots and opened What’s Zaap? Thai Food—a new beginning inspired by authentic Thai flavors.

Every recipe is inspired by years spent growing up around Thai kitchens and markets, where food was made from scratch with care. That same tradition guides everything we do today. Our restaurant at 9575 W Tropicana Ave #1, Las Vegas, NV is all about sharing the taste of home with everyone who walks through the door.
